Timing Is Everything
Harvest at HALL is never a single event, but a carefully orchestrated series of stages. Our vineyards are divided into small blocks, each with unique soils, rootstocks, and clones. Because of this complexity, different vines mature at different times. Vice President of Winemaking Megan Gunderson and her team walk the vineyards daily, tasting grapes and analyzing sugar and acidity levels until the fruit reaches its peak expression.
The season usually begins in late August or early September with our Sauvignon Blanc, prized for its vibrant aromatics and crisp freshness. Shortly after, Merlot and Cabernet Sauvignon follow, often lingering into October for optimal richness and depth.
From Vineyard to Winery
Under the direction of Director of Vineyards, Don Munk, our team hand-picks the grapes in the cool mornings or overnight to preserve freshness. Fruit is delivered in small bins to our production facility — HALL St. Helena and HALL Rutherford for our single-vineyard Cabernet Sauvignons and the flagship Kathryn Hall.
Once at the winery, every cluster undergoes a meticulous sorting process. After an initial hand sort, grapes pass through our cutting-edge optical sorter machines, which scan each berry and remove anything less than perfect. This innovative technology ensures that only the finest fruit makes its way into the fermenters, maximizing quality and purity.
Fermentation & Aging
Sorted grapes are gently destemmed and moved into stainless steel tanks. After a cold soak to extract color and flavor, fermentation begins, guided by both natural and cultured yeasts. Daily pump-overs allow careful extraction of tannins and aromatics, and within about three weeks, the new wine is ready for barrel.
Every HALL red wine is aged in French oak barrels — often more than 50% new — sourced from the finest coopers. Like spices in a chef’s kitchen, each barrel brings unique nuances, contributing layers of flavor and complexity. Over 16–22 months, the wines evolve through racking and careful monitoring, until they embody the plush, elegant style that defines HALL.
